After a month of tasting and voting for new local vegan dishes, the 2024 Lincoln Vegan Chef Challenge has officially come to a close.
The winning restaurants were announced Nov. 6 after votes from more than 100 Lincoln residents were tallied for the various chefs and dishes. The challenge, which lasted through the month of October, included 12 businesses and restaurants that created new vegan dishes for diners.
First place was awarded to Fleetwood restaurant for its vegan pork tenderloin sandwich. Fleetwood opened more than two years ago in the Haymarket, 801 O St., and has offered gluten-free, vegetarian and plant-based options.
Sarah Hyden, the organizer of the Lincoln challenge, said voters included vegans, vegetarians and meat eaters who ate at the restaurants and then submitted their votes online.
“It was a blast. We had a ton of fun,” Hyden said. “We got so much good feedback on the dishes that these restaurants, that the chefs came up with.”
The challenge, which took place for the first time in Lincoln, is part of a nationwide effort from Vegan Outreach, a nonprofit organization based in California. Lincoln joined the 43 cities participating in a challenge this year across the nation in which 723 businesses participated.
In order to participate in the challenge, the local businesses had to create one to three new vegan dishes that were different from any vegan dishes on current or past menus. Hyden said the reasoning behind creating new recipes is to help increase vegan options in the Lincoln area.

“We’ve also found diners just love something new that they haven’t tried before, something creative,” Hyden said. “So it was giving these chefs an opportunity to get their creativity out.”
Second place went to Rita’s Pizza and Chicken, 1000 Saunders Ave., which created a vegan momo (dumpling) and a mushroom chili. Sarita Rai from Rita’s said she created a total of five dishes for the challenge. Rai said she had never created a vegan dish before and plans to keep the options on her menu.
“Participating in the Vegan Chef Challenge gave me the opportunity to showcase my culinary skills and share unique recipes,” Rai said.
Green Leaf Tea Owner Elizabeth Hefley said they created two drink options and five different scone flavors for the challenge at their 2917 Pine Lake Road location. Hefley said the scone recipes will stick around in their repertoire as they host Scone Saturday once a month, but the drink recipes were seasonal for October.
“We’re definitely going to start looking at more vegan drink options too ... especially since tea is vegan anyway to begin with, it’s not hard to adapt,” Hefley said.
Prior to the challenge, Hefley said she had limited experience working with vegan recipes, but she appreciated the feedback and support she got.
“It was daunting and it was kind of scary, especially because I personally don’t come from a culinary background,” Hefley said. “I’m still learning and I’m still newer at it, but it was really honoring to be asked to be in it. I feel like it really helped to push me past my boundaries and my limits, and I think we came up with some really good products.”
