A new restaurant, planned for the Jayne Snyder Trails Center at Union Plaza, will serve both vegetarian and “animal welfare-approved" meat.
Krista Peeks Dittman described what she and her husband, Doug, plan to do with the Hub Café at 21st and Q streets during a City Council public hearing on their request for a liquor license.
The couple owns Branched Oak Farm and plans to expand their philosophy of bringing local and healthy food into the community through the café. They are hoping to open this fall.
They will serve breakfast, lunch and dinner, probably six days a week.
“It will be delicious and healthy food,†she said.
The café will also serve some beer and wine, although they expect alcohol to be a small portion of the business. In the purchase agreement, they agreed to limit alcohol to no more than 40 percent of the sales.
